Nowadays we must call the oil that emerges from this first harvest as an early harvest extra virgin olive oil that has probably followed a cold extraction process. This is because the extraction of the oil is done at a low temperature, the temperature is not increased (with which they obtain greater yields) so as not to damage the fruit and to extract the oils as close as possible to that of the olive inside.
