al-balâta

The Arabic word Al-balâta means "the paved", referring to the paving of the Roman road of the Vía de La Plata, from which its current name seems to come. This road was the backbone of Roman Lusitania and was later used by Arabs and other peoples as well as transhumants, being used regularly until well into the 19th century. In the Roman Empire the cultivation of the olive tree spread throughout all the regions of the Mediterranean.

From our mill next to this thousand-year-old road and from our olive groves in "Valdecacho", "Fuentenácar" and "El Zorro", cultivated through organic farming, we obtain our "extra virgin" organic oils of the Morisca, Manzanilla Cacereña, Arbequina, Pico Limón, Carrasqueña and Picual.

Our Ecological Olive Groves

Our olive groves are organic and are grown without using artificial chemicals, respecting the environment and promoting biodiversity in the ecosystem. Our olive groves are agriculturally treated through practices such as crop rotation, the use of organic fertilizers and the sustainable management of water and natural resources. In our organic mill, the olive oil production process is carried out without using chemical products or artificial additives, which guarantees the purity of the oil and its nutritional quality.

The advantages of an organic olive grove compared to one that is not are diverse. First of all, organic products are healthier and safer for human consumption, since they do not contain pesticide residues or other chemical products. In addition, organic farming respects the environment and promotes biodiversity, which helps preserve local ecosystems and protect native fauna and flora. Organic crops have also been shown to be more resistant to diseases and pests, reducing the need to use chemicals to protect them.

In short, organic olive groves and organic mills are a healthy and sustainable option for the production of olive oil, and contribute to protecting the environment and promoting a healthier lifestyle that is more respectful of the planet.

    

Our Varieties

Our mill works with different varieties of olives to produce a wide range of oils with different flavor and aroma profiles.

Among the most common varieties are the Manzanilla cacereña, the arbequina, the morisca, the picual, the pico-limon and the cobrançosa. Each of these varieties has its own characteristics, which influence the quality and flavor of the oil.

The Manzanilla from Cacereña, for example, is characterized by its fruity and soft flavor, while the Arbequina has a sweeter and fruitier flavor. The Morisca, on the other hand, produces oils with a slightly bitter and spicy flavor, while the Picual stands out for its intense and bitter flavor. Pico-limon, for its part, is a variety that produces oils with a slightly lemon flavor, and Cobrançosa is a Portuguese variety that produces oils with a balanced and slightly sweet flavor.
