This brand produces its olive oil from the province of Jaén, specifically in the region of Martos. Landscape fundamentally identified by the geographical accident commonly called "la peña de martos".
The Martos olive trees are considered to be the oldest in the Iberian Peninsula, with the Romans being the driving force behind the cultivation of the olive tree in these lands, choosing these countryside because of the special characteristics of their land, as they are ideal for obtaining olive oil.
The production is carried out in October with the harvest of green olives and by means of a cold extraction process. It is a very particular Extra Virgin Olive Oil, it combines extreme delicacy with extraordinary density, subtle and fresh fragrances: the tasting highlights among its main qualities a very fine fruity, very balanced, with hardly any bitterness and hardly any sharpness, very well modulated.
COLOUR: yellowish green, golden reflections, bright and luminous.
SMELL: Complexity of green aromas and fresh fruits. Aromatic herbs such as basil and fennel combine with aromas of tomato and avocado. Hints of banana apple and ripe almond.
TASTE: great correspondence with the olfactory perception, soft entry, almost sweet, then appearing a light and bitter spicy very balanced. Velvety and with good persistence.
