Castillo de Canena is a unique family business, involved in the whole process of creating the extra virgins: from the tree to its commercialization. The farm is located in the province of Jaén. It works under the API certification, an environmentally friendly way of agriculture, halfway between traditional and organic farming. The farm passes monthly audits that certify compliance with all standards. Currently, most of the farm is being reconverted to organic farming.
This is a unique oil infused with marine plankton that results in an ideal combination of flavours to accompany seafood and raw seafood.
This exclusive combination of Castillo de Canena creates aromas of fresh olives, fruit trees that intensify the green seaweed, and iodine and the intensity of the crustacean.
This oil is defined as fresh and elegant, with a soft bitter and balanced spiciness, which disappears quickly. The sensation in the mouth is very sweet in balance with the salty memories of the sea.
