In the foothills of the beautiful Sierra Morena, Casa del Agua de Oro Bailén olive oil is produced with a Picual variety and a medium-low intensity that is an ideal pairing for any food of the Mediterranean diet.

It is a very stable, balanced and smooth EVOO, although with great body, which makes it a very suitable oil for use in traditional cooking: frying, sautéing and stews.  It has nuances reminiscent of tomato or almond and presents a perfect balance between bitterness and spiciness. Sweet on the palate with a slight bitterness. Accompanied at the end by a slight spiciness.

Casa del Agua de Oro Bailén is an oil that has been produced since the end of the 19th century and has been able to modernise thanks to the work of the company GALGÓN 99, S.L. from Bailén with a restructuring plan that took its first steps in 2005. The rise since then has been unstoppable for this small family business, which has managed to export this 100% Picual olive oil to some of the most demanding markets in the world. The oil company has the Quality Management Certificate according to ISO 9000, issued by APPLUS +.

MODERNITY AND TRADITION IN CASA DEL AGUA ORO BAILÉN PICUAL OLIVE OIL 

Undoubtedly, one of the great challenges that the olive oil sector had to face was to modernise without losing the family essence that has distinguished the artisanal production of liquid gold in olive oil mills for decades. GALGON 99 S.L. has undoubtedly achieved this task by implementing a semi-manual harvesting process in which the trunk is vibrated (or "varea") so that the fruit falls from the tree faster and in greater quantity. The fruit is harvested in bales during the month of November and transported to the oil mill for early processing.
