Arbequina & Co of Castillo de Canena

Castillo de Canena brings us a new product in the line of innovation to which the oil company of Jaén has accustomed us. Arbequina & Co is a set of 4 100 ml bottles of gourmet arbequina oil fused with essential oils. Each bottle is numbered according to a unique fusion of flavours and aromas, which will give our recipes a special touch. 

Castillo de Canena presents this box with four different types of combinations of arbequina oil with fruits, plants and flowers. The essences that we will find in Arbequina & Co. are the following

01: Bitter orange, thyme and orange blossom. 

This fusion of flavours and aromas is particularly suitable for desserts such as lemon cake or apple pie, which will add the aromatic touch of orange, thyme and orange blossom to the juiciness of the dough. It is a healthy alternative to reduce butter and achieve flavours in line with the Mediterranean diet. It can also be used in cocktails such as Bloody Mary or Manhattan by adding about 15 drops. Another good combination is in the mixture of cheeses such as Cheddar and Brie.

02: lemon, fennel and mint.

The touch of lemon, fennel and mint together with the softness and sweetness of the arbequina makes the number "02" an ideal arbequina oil for fish and seafood such as oysters, lobster or other crustaceans. Ideal for Peruvian ceviches and tiraditos; mozzarella and Emmental cheeses, and even with cocktails such as Margarita, Daikiri and Mojito.

03: cardamom, tangerine and apple 

The aromatic intensity of cardamom makes this arbequina oil from Jaen a special complement to Dry Martini or Gin Tonic, adding 15 drops to the first and 20 to the second, respectively. It is also an ideal mix for our pasta and rice dishes, adding about 40 drops. For cheese, it goes perfectly with ball cheese and blue cheese. Similarly, you can achieve incredible flavours by adding this oil to roast pork, barbecued or grilled chicken, and even when making mayonnaise, adding 2 spoonfuls to 250 ml of Castillo de Canena arbequina oil. Once curdled, mix with vegetables, asparagus, prawns or in rice and pasta. 

04: cinnamon, walnut and bergamot 

The number "04" is the most aromatic bottle; as it has the aroma of cinnamon, walnut and bergamot. Imagine these aromas in the retronasal part, creating an explosion of experiences in desserts like chocolate cake or some biscuits. The subtlety of arbequina oil is ideal for replacing butter in many desserts; combined with these aromas they create a unique fusion. It is also perfect for refreshing drinks such as Iced Tea or Piña Colada, although it can also be perfectly combined with Manchego cheese or queso fresco.

The presentation is in dropping bottles and aims to become an icon of haute cuisine. It is a new gastronomic experience offered to gourmet cuisine lovers.

Castillo de Canena is a unique family business, involved in the whole process of creating the extra virgins: from the tree to its marketing. The farm is located in the province of Jaén. It works under the API certification, an environmentally friendly way of agriculture, halfway between traditional and organic farming. The farm passes monthly audits that certify compliance with all standards. Currently, most of the farm is being reconverted to organic farming.

Arbequina oil from Jaen de Castillo de Canena:

On the nose: softly fruity fresh olive, with slight hints of banana, green apple and artichoke, and a slight spicy hint typical of the Jaen arbequinos, very high in oleic acid and polyphenols, which gives them extraordinary stability.

In the mouth: it has an elegant entry; it is fluid and sweet on the palate.

Each year it collects a multitude of these prizes that guarantee its dedication and effort for the quality of the oils that they produce.

All the oils produced are kept in stainless steel tanks for perfect conservation. Once bottled, they are kept away from light and heat sources.
