This Extra Virgin Olive Oil is produced by carefully selecting the green olives that are harvested at the beginning of October.
We select the day when the temperatures are expected to be lower than normal to guarantee that the fruit is processed in the most favorable conditions possible and thus obtain the highest QUALITY.
The mixing time of the olive paste is a very important factor in grinding. In this special selection for our "First day", we significantly reduce the blending time at low temperature to prevent the aromas of the olive from volatilizing. Although this reduces the fat yield, it produces an EVOO of great healthy and organoleptic quality.
The result is an early harvest Extra Virgin Olive Oil with a bright green color and particular and exclusive sensory nuances, such as its freshness and intense fruity aroma. Ideal to enjoy raw.
For our "First day", we have chosen three types of packaging, the 700ml bottle being the largest. In addition, this bottle can be purchased together with a jute bag, ideal for gifts.
