Oro Bailen Picual EVOO pearls are presented in the form of uniform, seamless capsules, with a diameter of between 5 and 8 mm, made up of a sodium alginate membrane (E-401) (from seaweed), and a filling of Oro Bailen Reserva Familiar Picual / Arbequina extra virgin olive oil. As they come from the Arbequina variety, they are green in colour.
The product increases the nutritional value of the food to which it is added. They are thermo-reversible and have great thermal stability, withstanding temperatures of up to 100ºC.
The stability and mechanical resistance of these extra virgin olive oil capsules allow the product to be added and mixed with other foods without damaging the membrane.
Properties and possible applications
High oleic acid content: Replacing saturated fats with unsaturated fats in the diet helps to maintain normal blood cholesterol levels. Oleic acid is an unsaturated fat.
