Its elaboration begins after the first night of harvest (dedicated to the Luxury edition), and continues during the following six nights to obtain a unique gourmet extra virgin olive oil in the world.
The Emerald Red Diamond oil is included in the premium range "Precious Stones" which is inspired by the four gems recognized by the classic jewellery that are the Emerald, the Diamond, the Sapphire and the Ruby.
This edition is presented in a 500 ml red bottle with an extra virgin olive oil of the Royal variety, exclusive and native of the Sierra de Cazorla and which is not cultivated anywhere else in the world. It is a variety that is only grown in the surroundings of the second largest natural park in Europe, the Sierra de Cazorla Segura y las Villas natural park.
This unique variety produces a low content of olive oil so this is a very high quality oil that deserves a higher production to obtain levels that other varieties produce in smaller extensions of olive groves.
The Esmeralda Red Diamond Green oil has properties that give it the characteristic Jaen variety such as the fruity fresh grass and green oil and the soft aroma of the olive grove in the early morning. The obvious flavour is the classic spiciness of other varieties such as the Picual and the entry is pleasant and of a soft bitterness, presenting traces of ripe fig, banana and apple in the nose.
